Eggplant Parmesan (Parmigiana)
This is a GREAT healthy alternative to the traditional Eggplant Parmigiana (which is fried). It is great for an appetizer before your meal or as the entree, and looks very elegant in presentation. Your guests will be VERY happy. It’s Lactose Free and GlutenFree and yet tastes AMAZING. Buon Appetito!
